Walnut is a rich source of nutrients, including fats, proteins and other beneficial components. However, the protein and fibre content of the walnut kernel is relatively low due to the high oil content.
Henan subcritical extraction process is employed to achieve the desired quality of walnut oil. The research and development team employs a combination of hydraulic cold pressing and subcritical extraction to produce a premium quality cold pressed walnut oil. This process also results in the preservation of walnut protein, enhancing the overall utilisation of the oilseed.
The specific method is as follows: firstly, a hydraulic oil press is employed to cold press out 70% of the oil. The crushed cake is subjected to subcritical extraction at a temperature range of 25 to 35 degrees Celsius, with a maximum residual oil content of 1% and an NSI value exceeding 80%. The walnut protein basic invariant is also observed.
